Description

This Steak Bites and Potatoes recipe is a quick and easy one-pan meal that’s perfect for a weeknight dinner. Tender steak bites and crispy potatoes are cooked together in a skillet with a flavorful blend of seasonings.

Ingredients

Units Scale
  • 1 tablespoon olive oil
  • 2 tablespoons salted butter, divided
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 pound baby potatoes, halved or cut into 1-inch chunks
  • 2 pounds top sirloin steak, cut into 1 1/2- to 2-inch chunks
  • 1 teaspoon low-sodium Montreal steak seasoning (or 1/2 teaspoon if using full sodium)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prep ingredients: Combine salt, pepper, onion powder, and garlic powder in a small bowl. Cut potatoes and steak into evenly sized pieces. Pat steak dry.
  2. Cook potatoes: Melt 1 tablespoon butter with olive oil in a large skillet over medium-high heat. Add potatoes in a single layer, flat-side down, and sprinkle with half of the seasoning mixture. Cook for 4-5 minutes.
  3. Season steak: While potatoes cook, toss steak bites with Montreal steak seasoning.
  4. Finish potatoes: Flip potatoes and sprinkle with remaining seasoning. Cook for another 4-5 minutes. Remove from pan and set aside.
  5. Cook steak: Melt remaining butter in the skillet. Add steak bites in a single layer and cook for 2 minutes per side for medium-rare, turning frequently to brown all sides.
  6. Combine and serve: Return potatoes to the skillet and cook for 1 minute more. Rest for 2 minutes before serving. Garnish with parsley.

Notes

  • For optimal searing, bring steak to room temperature before cooking and pat it dry.
  • Cut potatoes and steak into uniform sizes for even cooking.
  • Use a combination of butter and olive oil to prevent the butter from burning.
  • Adjust cooking time for steak based on your preferred level of doneness.
