			- 1 pound 93/7 ground beef
 - 3 cups thinly sliced cabbage
 - 1 1/2 cups thinly sliced red bell pepper
 - 3 cloves garlic, minced
 - 2 cups chicken stock
 - 3 tablespoons soy sauce
 - 3 tablespoons hoisin sauce
 - 2 (3 ounce) packages instant ramen noodles (seasoning packet discarded)
 - 1 cup matchstick carrots
 - Thinly sliced scallions, for garnish
 - Toasted sesame seeds, for garnish
 
Instructions
- Brown Beef and Vegetables: Heat a Dutch oven over medium-high heat. Brown ground beef, breaking it into crumbles. Stir in cabbage, bell peppers, and garlic. Cook until vegetables soften.
 - Add Broth and Noodles: Stir in chicken stock, soy sauce, and hoisin sauce. Bring to a boil. Add ramen noodles, ensuring they are submerged in the broth. Reduce heat, cover, and cook until noodles are tender (5-7 minutes).
 - Finish and Serve: Stir in carrots. Cover and remove from heat. Let sit until carrots are tender (1-2 minutes). Garnish with scallions and sesame seeds. Serve immediately.
 
Notes
- You can substitute ground turkey or chicken for the ground beef.
 - If you don’t have matchstick carrots, you can use shredded carrots or baby carrots cut into thin strips.
 - For a spicier dish, add a pinch of red pepper flakes or a drizzle of chili oil.
