Description

This One Pan Baked Italian Sausage and Veggies recipe is a simple and healthy meal that’s perfect for busy weeknights. Sausage, potatoes, broccoli, and other vegetables are tossed with olive oil and seasonings, then roasted to perfection in a single pan.


Ingredients

  • 2 cups broccoli florets
  • 1 cup onions, cut into 1-inch chunks
  • 2 cups small mushrooms, halved or quartered
  • 1 cup baby carrots
  • 2 tablespoons olive oil

  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 pound sweet Italian sausage links, sliced on the bias

Instructions

  1. Preheat and prep: Preheat oven to 400°F (200°C).
  2. Combine vegetables and seasonings: In a large bowl, toss together potatoes, broccoli, onions, mushrooms, and carrots with olive oil, salt, pepper, garlic powder, and Italian seasoning.
  3. Roast: Spread vegetables in a single layer on a baking sheet. Distribute sausage slices throughout the pan. Bake for 30 minutes, shaking the pan halfway through to prevent sticking.
