- 2 cups small mushrooms, halved or quartered
- 1 cup baby carrots
- 2 tablespoons olive oil

- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1 pound sweet Italian sausage links, sliced on the bias
Instructions
- Preheat and prep: Preheat oven to 400°F (200°C).
- Combine vegetables and seasonings: In a large bowl, toss together potatoes, broccoli, onions, mushrooms, and carrots with olive oil, salt, pepper, garlic powder, and Italian seasoning.
- Roast: Spread vegetables in a single layer on a baking sheet. Distribute sausage slices throughout the pan. Bake for 30 minutes, shaking the pan halfway through to prevent sticking.
Notes
- You can use different types of vegetables, such as bell peppers, zucchini, or asparagus.
- If you don’t have Italian sausage, you can use another type of sausage, such as chicken or turkey sausage.
