  • 1 teaspoon paprika
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 3/4 cup dry orzo pasta
  • 1 cup heavy cream
  • 3 cups baby spinach
  • 3/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Red pepper flakes, for garnish

Instructions

  1. Brown sausage and sauté vegetables: In a large pot or Dutch oven, cook sausage and onion over medium-high heat until sausage is browned and onions are softened. Add garlic and cook until fragrant.
  2. Make roux: Stir in flour and tomato paste.
  3. Add liquids and pasta: Pour in chicken broth, Italian seasoning, paprika, sun-dried tomatoes, and orzo pasta. Bring to a boil, then reduce heat and simmer for 10-13 minutes, or until orzo is cooked through.
  4. Stir in cream, spinach, and cheese: Add heavy cream, spinach, and Parmesan cheese. Stir until spinach wilts and cheese is melted.
  5. Season and serve: Season with salt and pepper to taste. Garnish with red pepper flakes and serve hot.

Notes

  • You can use different types of sausage, such as Italian sausage or chicken sausage.
  • If you don’t have orzo pasta, you can use other small pasta shapes, such as ditalini or pastina.
