- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon ground cumin
- 1 1/2 teaspoons sea salt

- 2 lbs ground lamb
- 8 bamboo skewers
Instructions
- Soak Skewers: Soak bamboo skewers in water for 30 minutes. Pat dry before using.
- Prepare Kofta Mixture: In a large bowl, combine grated onion, minced garlic, chopped parsley, dill, cumin, salt, and pepper. Add ground lamb and mix until just combined. Avoid overmixing.
- Shape Kebabs: Divide the mixture into 16 equal portions. Mold each portion around a skewer, forming a long, thin kebab shape (about 1 inch thick). Thread 2 portions per skewer, leaving space between them.
- Grill: Preheat grill to medium-high heat and lightly oil the grates. Grill kebabs for 3 minutes per side, or until cooked to your desired level of doneness.
- Rest and Serve: Let the kebabs rest for a few minutes before serving. This allows the juices to redistribute, resulting in more tender and flavorful kebabs.
Notes
- If you don’t have bamboo skewers, you can use metal skewers.
- For a smokier flavor, you can add a pinch of smoked paprika to the kofta mixture.
