Ingredients

  • 1/4 cup onion, grated
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoons sea salt
  • 1/4 teaspoon black pepper
  • 2 lbs ground lamb
  • 8 bamboo skewers

Instructions

  1. Soak Skewers: Soak bamboo skewers in water for 30 minutes. Pat dry before using.
  2. Prepare Kofta Mixture: In a large bowl, combine grated onion, minced garlic, chopped parsley, dill, cumin, salt, and pepper. Add ground lamb and mix until just combined. Avoid overmixing.
  3. Shape Kebabs: Divide the mixture into 16 equal portions. Mold each portion around a skewer, forming a long, thin kebab shape (about 1 inch thick). Thread 2 portions per skewer, leaving space between them.
  4. Grill: Preheat grill to medium-high heat and lightly oil the grates. Grill kebabs for 3 minutes per side, or until cooked to your desired level of doneness.
  5. Rest and Serve: Let the kebabs rest for a few minutes before serving. This allows the juices to redistribute, resulting in more tender and flavorful kebabs.

Notes

  • If you don’t have bamboo skewers, you can use metal skewers.
  • For a smokier flavor, you can add a pinch of smoked paprika to the kofta mixture.
