Description

A quick and easy stovetop potato side dish in a tasty honey and mustard sauce that features crispy golden brown outsides, tender, melt-in-your-mouth insides, all covered in a sweet and tangy glaze.

Ingredients

Units Scale

Potatoes:

  • 1 1/2 pounds baby potatoes (or potatoes cut into 1.5 inch cubes)

Sauce:

  • 2 tablespoons olive oil (or butter)
  • 1/4 cup honey
  • 2 tablespoons dijon mustard
  • 2 tablespoons grainy mustard
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, chopped
  • 1/4 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Cook Potatoes: Cover the potatoes in water in a large pot, bring to a boil, and cook until just tender, about 10 minutes. Drain.
  2. Fry Potatoes: Heat oil in a large skillet over medium heat, add the potatoes, and cook until golden brown, about 10 minutes.
  3. Make Sauce: In a bowl, mix honey, mustards, vinegar, garlic, salt, and pepper. Toss the cooked potatoes in this mixture and cook for an additional 2-3 minutes.
