Description

This Easy Taco Soup is a flavorful and comforting meal that’s ready in just 20 minutes! With only 5 simple ingredients, it’s a perfect weeknight dinner when you’re short on time. Ground beef, taco seasoning, and diced tomatoes simmer in a rich broth, creating a hearty and satisfying soup.


Ingredients

  • 1 lb ground beef
  • 3 tablespoons taco seasoning (divided)
  • 4 cups beef bone broth (or any broth)
  • 2 (14.5-oz) cans diced tomatoes, undrained
  • 3/4 cup ranch dressing
  • Optional Garnishes: shredded cheddar cheese, cilantro

Instructions

  1. Brown Beef: In a large pot over medium-high heat, brown ground beef. Drain any excess grease.
  2. Simmer with Taco Seasoning: Add 2 tablespoons of taco seasoning and ¾ cup of broth to the pot. Simmer until the liquid is mostly absorbed.
  3. Add Remaining Ingredients: Pour in the remaining broth, diced tomatoes (undrained), and the remaining tablespoon of taco seasoning. Stir and bring to a simmer for 8-10 minutes.
  4. Finish and Serve: Remove from heat and wait 2 minutes. Stir in ranch dressing. Garnish with shredded cheddar cheese and cilantro, if desired.

Notes

  • You can use ground turkey or chicken instead of ground beef.
  • Adjust the amount of taco seasoning to your preferred taste.
  • For a thicker soup, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) towards the end of the cooking time.
  • This soup is also delicious with other toppings, such as sour cream, avocado, or tortilla chips.
