- 1 lb ground beef
- 3 tablespoons taco seasoning (divided)
- 4 cups beef bone broth (or any broth)
- 2 (14.5-oz) cans diced tomatoes, undrained
- 3/4 cup ranch dressing
- Optional Garnishes: shredded cheddar cheese, cilantro
Instructions
- Brown Beef: In a large pot over medium-high heat, brown ground beef. Drain any excess grease.
- Simmer with Taco Seasoning: Add 2 tablespoons of taco seasoning and ¾ cup of broth to the pot. Simmer until the liquid is mostly absorbed.
- Add Remaining Ingredients: Pour in the remaining broth, diced tomatoes (undrained), and the remaining tablespoon of taco seasoning. Stir and bring to a simmer for 8-10 minutes.
- Finish and Serve: Remove from heat and wait 2 minutes. Stir in ranch dressing. Garnish with shredded cheddar cheese and cilantro, if desired.
Notes
- You can use ground turkey or chicken instead of ground beef.
- Adjust the amount of taco seasoning to your preferred taste.
- For a thicker soup, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) towards the end of the cooking time.
- This soup is also delicious with other toppings, such as sour cream, avocado, or tortilla chips.
