- 2 tablespoons olive oil
- 1 cup diced onion (about 1 small onion)
- 1 cup diced carrots (about 2 medium carrots)
- 1 cup diced celery (about 2 ribs)
- 1 medium head of cabbage, cored and chopped
- 3 teaspoons minced garlic (about 3 cloves)
- 1 teaspoon ginger paste (or grated ginger)
- 1/2 teaspoon turmeric
- Salt and pepper, to taste
- 1 (14.5-ounce) can diced tomatoes
- 6 cups vegetable broth
Instructions
- Sauté vegetables: Heat olive oil in a large pot over medium-high heat. Add onion, carrots, and celery. Cook until slightly tender, about 5 minutes.
- Add cabbage and spices: Add cabbage, garlic, ginger, turmeric, salt, and pepper. Cook, stirring frequently, until cabbage wilts.
- Simmer: Pour in diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are soft.
- Serve: Serve hot with additional salt and pepper to taste.
Notes
- You can add other vegetables, such as green beans, bell peppers, or mushrooms.
- If you don’t have ginger paste, you can use freshly grated ginger.
- This soup can be stored in the refrigerator for up to 3 days.
