Description

This Detox Cabbage Soup is a light and healthy soup that’s packed with nutrients. It’s a great way to get your daily dose of vegetables and is perfect for a quick and easy meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced onion (about 1 small onion)
  • 1 cup diced carrots (about 2 medium carrots)
  • 1 cup diced celery (about 2 ribs)
  • 1 medium head of cabbage, cored and chopped
  • 3 teaspoons minced garlic (about 3 cloves)
  • 1 teaspoon ginger paste (or grated ginger)
  • 1/2 teaspoon turmeric
  • Salt and pepper, to taste
  • 1 (14.5-ounce) can diced tomatoes
  • 6 cups vegetable broth

Instructions

  1. Sauté vegetables: Heat olive oil in a large pot over medium-high heat. Add onion, carrots, and celery. Cook until slightly tender, about 5 minutes.
  2. Add cabbage and spices: Add cabbage, garlic, ginger, turmeric, salt, and pepper. Cook, stirring frequently, until cabbage wilts.
  3. Simmer: Pour in diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are soft.
  4. Serve: Serve hot with additional salt and pepper to taste.

Notes

  • You can add other vegetables, such as green beans, bell peppers, or mushrooms.
  • If you don’t have ginger paste, you can use freshly grated ginger.
  • This soup can be stored in the refrigerator for up to 3 days.
