Description

This Cozy Lentil Soup is a hearty and comforting vegetarian dish thatโ€™s perfect for a chilly day! Lentils, potatoes, carrots, and spinach simmer in a flavorful broth with herbs and spices. Itโ€™s a simple and satisfying soup thatโ€™s easy to make in your slow cooker.


Ingredients

  • 2 cups peeled and cubed sweet potatoes
  • 2 cups peeled and cubed russet potatoes
  • 2 cups peeled and sliced carrots
  • 1 small yellow onion, diced
  • 6 cloves garlic, minced
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1 3/4 cups green lentils (or a mix of lentils and split peas)
  • 8 cups vegetable broth
  • 1/3 cup quality olive oil
  • 3 cups baby spinach (or kale, stems removed)
  • 1 cup fresh parsley, roughly chopped
  • 2 tablespoons red wine vinegar
  • Optional: Parmesan cheese, for garnish

Instructions

  1. Combine Ingredients: Add sweet potatoes, russet potatoes, carrots, onion, garlic, salt, pepper, basil, oregano, thyme, red pepper flakes, lentils, and vegetable broth to a slow cooker.
  2. Slow Cook: Cook on HIGH for 4-5 hours, or until lentils and vegetables are tender.
  3. Blend Some Soup: Transfer 4 cups of the soup to a food processor or blender. Add olive oil and blend until smooth. Return the blended mixture to the slow cooker and stir to combine. Adjust seasoning if needed.
  4. Add Greens: Stir in spinach and parsley. Cover and cook on LOW for 15 minutes, or until greens are wilted.
  5. Finish and Serve: Stir in red wine vinegar. Serve warm with Parmesan cheese, if desired.

Notes

  • You can use any type of lentil you like, but green lentils or brown lentils hold their shape well in this soup.
  • If you donโ€™t have a slow cooker, you can make this soup on the stovetop. Simply simmer all the ingredients together in a large pot until the lentils and vegetables are tender.
  • For a thicker soup, you can mash some of the lentils and vegetables before serving.
