- 2 cups peeled and cubed sweet potatoes
- 2 cups peeled and cubed russet potatoes
- 2 cups peeled and sliced carrots
- 1 small yellow onion, diced
- 6 cloves garlic, minced
- 1 1/2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes
- 1 3/4 cups green lentils (or a mix of lentils and split peas)
- 8 cups vegetable broth
- 1/3 cup quality olive oil
- 3 cups baby spinach (or kale, stems removed)
- 1 cup fresh parsley, roughly chopped
- 2 tablespoons red wine vinegar
- Optional: Parmesan cheese, for garnish
Instructions
- Combine Ingredients: Add sweet potatoes, russet potatoes, carrots, onion, garlic, salt, pepper, basil, oregano, thyme, red pepper flakes, lentils, and vegetable broth to a slow cooker.
- Slow Cook: Cook on HIGH for 4-5 hours, or until lentils and vegetables are tender.
- Blend Some Soup: Transfer 4 cups of the soup to a food processor or blender. Add olive oil and blend until smooth. Return the blended mixture to the slow cooker and stir to combine. Adjust seasoning if needed.
- Add Greens: Stir in spinach and parsley. Cover and cook on LOW for 15 minutes, or until greens are wilted.
- Finish and Serve: Stir in red wine vinegar. Serve warm with Parmesan cheese, if desired.
Notes
- You can use any type of lentil you like, but green lentils or brown lentils hold their shape well in this soup.
- If you donโt have a slow cooker, you can make this soup on the stovetop. Simply simmer all the ingredients together in a large pot until the lentils and vegetables are tender.
- For a thicker soup, you can mash some of the lentils and vegetables before serving.
