Description

This Ground Turkey Sweet Potato Skillet is a delicious and easy one-pan meal that is perfect for a quick weeknight dinner. Packed with lean protein and healthy sweet potatoes, this skillet is both flavorful and nutritious.

For the Skillet:

  • 2 tablespoons extra virgin olive oil
  • 1 pound free-range extra-lean ground turkey (or grass-fed ground beef)
  • 1 teaspoon garlic, minced
  • 1/2 cup onions, diced
  • 1/2 cup yellow pepper, diced
  • 1 1/2 cups sweet potato, diced
  • Salt and freshly ground black pepper, to taste
  • A pinch of red chili flakes (optional)
  • 1/2 cup shredded mozzarella cheese (omit for Whole30 or Paleo)

For Garnish:

  • Fresh parsley, for garnishing (optional)

Instructions

  1. Heat Skillet: In a cast iron skillet, heat olive oil over medium-high heat.
  2. Cook Turkey: Add ground turkey and garlic, breaking up the turkey as it cooks. Cook for about 5 minutes.
  3. Add Vegetables: Add onions and yellow peppers, cooking until onions are soft.
  4. Add Sweet Potatoes: Stir in sweet potatoes, red chili flakes, salt, and pepper. Cover and cook until sweet potatoes are tender.
  5. Preheat Oven: Preheat oven to 400ºF.
  6. Add Cheese: When sweet potatoes are tender, sprinkle mozzarella cheese over the skillet and place in the oven to melt.
  7. Garnish and Serve: Once cheese is melted, remove from oven, garnish with parsley, and serve.
