Description

This Cabbage Casserole is a simple and comforting dish that’s perfect for a weeknight meal or a potluck. It features tender cabbage baked in a creamy and cheesy batter, making for a satisfying and flavorful side dish.

  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cornstarch
  • 1 pound green cabbage (1/2 medium head or 6 cups finely sliced)
  • 1/2 teaspoon salt
  • 2 tablespoons dill, fresh or frozen, chopped
  • 2 tablespoons green onion, finely chopped, plus more to garnish
  • 4 ounces mozzarella cheese (1 1/2 cups shredded)

Instructions

  1. Preheat and prep: Preheat oven to 375°F (190°C). Grease a 9-inch round pie dish.
  2. Make batter: In a bowl, whisk together eggs, sour cream, and mayonnaise.
  3. Add dry ingredients: In a separate bowl, stir together flour, baking powder, and cornstarch. Whisk into the egg mixture until smooth.
  4. Prepare cabbage: Place sliced cabbage in a bowl and sprinkle with salt. Scrunch cabbage to soften. Stir in green onion and dill.
  5. Assemble and bake: Spread cabbage mixture in the prepared pie dish. Pour batter evenly over the top. Sprinkle with mozzarella cheese. Bake for 35 minutes, or until golden brown.

Notes

  • You can use different types of cheese, such as cheddar or Monterey Jack.
  • If you don’t have fresh dill, you can use dried dill.
