Green Beans:

  • 600 g (18oz) green beans, extra thin

Shallot Mixture:

  • 1 shallot, finely chopped
  • 1 white peach, sliced finely
  • 1 tablespoon almonds, blanched, unsalted
  • 20 fresh basil leaves, finely chopped or torn
  • 3 tablespoons olive oil, extra virgin
  • 1/4 teaspoon salt (fleur de sel) or Maldon flakes, Celtic sea salt

Instructions

  1. Prepare Green Beans: Top and tail the green beans, then cook in simmering unsalted water for 5-10 minutes until al dente. Add a pinch of bicarbonate of soda at the last minute. Drain and set aside.
  2. Prepare Shallot Mixture: Sauté shallot in olive oil until golden. Add almonds and green beans. Remove from heat, add basil, salt, and pepper. Transfer to a dish and top with sliced peach.
