Scale
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, drained of oil and roughly chopped
- 1 tablespoon Italian seasoning
- 1 cup heavy cream
- 2 cups whole milk
- 8 ounces linguine, fettuccine, or spaghetti
- 2 cups spinach, roughly chopped
- 1 cup Parmesan cheese
- Kosher salt and freshly cracked black pepper, to taste
- Fresh basil leaves, for garnish (optional)
Instructions
- Sauté aromatics: In a large saucepan, heat olive oil and butter. Once butter is melted, sauté garlic, sun-dried tomatoes, and Italian seasoning for 30 seconds or until fragrant.
- Cook pasta: Add heavy cream, milk, and pasta to the saucepan, stirring to combine. Bring to a simmer and cook until the pasta is al dente, stirring frequently to prevent sticking.
- Add spinach and cheese: Stir in the spinach and Parmesan cheese. Cook for 1-2 minutes, or until the spinach is wilted and the cheese is melted.
- Serve: Season with salt and pepper to taste. Garnish with fresh basil leaves, if desired. Serve immediately.
Notes
- For a richer flavor, use a combination of Parmesan and Pecorino Romano cheese.
- If you don’t have sun-dried tomatoes, you can substitute with 1 (14.5 oz) can of diced tomatoes, drained.
- To add protein, you can add cooked chicken, shrimp, or Italian sausage to the dish.
