Ingredients

Units Scale

For the Crust

  • 1 cup all purpose flour
  • 1/4 cup + 2 tbsp softened butter
  • 1 tsp vanilla
  • 1/2 cup granulated sugar
  • 1/2 tsp salt

For the Berry Filling

  • 1 1/4 cups blackberries
  • 1 1/2 cups blueberries
  • 1 1/4 cups raspberries
  • 1/4 cup cornstarch
  • 1/2 cup sugar
  • 1 tsp lemon zest

For Crumble Topping

  • 1/4 cup softened butter
  • 1/2 cup + 2 tbsp flour
  • 1/4 cup + 2 tbsp granulated sugar
  • 1/4 tsp salt

Instructions

  1. Prepare the Oven and Crust
Preheat your oven to 375ยฐF. In a medium-sized bowl, cream the softened butter, granulated sugar, and vanilla together for about three minutes. Add the flour and salt to the mixture and mix well until it has a dry consistency. Line an 8 x 8-inch metal pan with parchment paper. Press the dough tightly and evenly onto the bottom of the pan to form the crust.
  2. Make the Berry Filling
In a bowl, combine the blackberries, blueberries, and raspberries. Sprinkle over the granulated sugar, cornstarch, and lemon zest. Gently toss the berries until coated evenly. Let the mixture sit for around 10 minutes, then pour the berry filling evenly over the prepared crust in the pan.
  3. Prepare the Crumble Topping
In another bowl, mix the softened butter and granulated sugar together. Add in the flour and salt until the mixture forms medium-sized clumps. Evenly sprinkle the crumble topping over the berry layer.
  4. Bake and Cool
Bake the cobbler in the preheated oven for 50โ€“60 minutes or until the top is golden brown. Once baked, allow the cobbler to cool completely before cutting into bars. This ensures the filling has time to firm up. Once cooled, cut into 16 bars and serve.

Notes

  • Fresh or frozen berries can be used in this recipe. If using frozen, make sure they are thawed and drained to avoid excess moisture.
  • For extra flavor, you can add a pinch of cinnamon to the crumble topping.
  • These bars taste even better the next day as the flavors meld together.
  • For a warm dessert, reheat the bars slightly in the microwave and serve with a scoop of vanilla ice cream or whipped cream.
