  • 1 1/2 cups (215 g) finely chopped apples, peeled & cored (about 2 apples)
  • 2 1/3 cups (290 g) all-purpose flour
  • 1/2 cup (100 g) light brown sugar, firmly packed
  • 1/4 cup (50 g) granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 1/2 cup (113 g) unsalted butter, melted
  • 3/4 cup (170 g) sour cream
  • 1/4 cup (60 ml) whole milk
  • 2 large eggs, lightly beaten
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat and prepare the pan: Preheat your oven to 350°F (175°C) and line a 9×5-inch bread pan with a parchment paper sling or lightly grease it with baking spray to prevent sticking.
  2. Make the cinnamon sugar topping: In a small bowl, whisk together ¼ cup granulated sugar and 2 teaspoons ground cinnamon. Set this mixture aside. Take 1 ½ tablespoons of this cinnamon sugar mixture and toss it with the finely chopped apples in another bowl. Set the coated apples aside for later use.
  3. Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, light brown sugar, remaining granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.
  4. Combine wet ingredients: In a separate bowl or large measuring cup, whisk together the melted unsalted butter, sour cream, whole milk, lightly beaten eggs, and vanilla extract until smooth.
