Sausage Mixture:

Instructions
- Preheat the oven:
Preheat your oven to 350ยฐF (175ยฐC) and coat a 9ร13-inch casserole dish with nonstick cooking spray. - Cook the sausage mixture:
In a medium nonstick skillet, combine the ground sausage, diced onion, and bell pepper. Cook over medium-high heat, breaking the sausage into crumbles with a wooden spoon, until itโs browned and no pink remains. Add the minced garlic and cook for about 20 seconds until fragrant. Drain any excess grease and spread the sausage mixture evenly in the prepared casserole dish. - Prepare the egg mixture:
In a large mixing bowl, whisk together the eggs, milk, garlic powder, kosher salt, pepper, and dry ground mustard (if using). Pour the egg mixture over the sausage mixture in the casserole dish. - Assemble the casserole:
Sprinkle half of the shredded Colby jack cheese over the egg and sausage mixture. Arrange the frozen tater tots evenly over the top. - Bake the casserole:
