  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1/4 cup yellow onions, chopped
  • 1/4 cup taco seasoning or 1 packet
  • 10 oz. can Rotel tomatoes (do NOT drain)
  • 8 oz. spaghetti noodles, uncooked
  • 3 cups water
  • For Garnish:
  • 4 oz. cheddar cheese, shredded
  • 1/2 cup chopped cilantro

Instructions

  1. Prepare the Ground Beef
    Heat 2 tablespoons of olive oil in a 12-inch skillet over medium heat. Add the ground beef and chopped onions, cooking until the beef is no longer pink and the onions have softened and become translucent. Stir occasionally to ensure even browning.
  2. Add Seasoning and Liquid
    Stir in the taco seasoning and the can of Rotel tomatoes along with all its juices. Then, add the uncooked spaghetti noodles and 3 cups of water. Combine all ingredients thoroughly to ensure even distribution.
  3. Cook the Spaghetti
    Raise the heat to high and bring the mixture to a boil. Once the water begins to boil, reduce the heat to low. Cover the skillet with a lid and allow the dish to simmer for about 15 minutes, stirring occasionally to prevent sticking.
  4. Incorporate Cheese
    Remove the skillet from heat. Sprinkle half of the shredded cheddar cheese over the cooked ingredients and stir it in thoroughly so it melts and coats the spaghetti evenly.
  5. Garnish and Serve
    Top the dish with the remaining cheese and the freshly chopped cilantro. Serve immediately for a flavorful, comforting meal.
