- 3 tablespoons vegetable oil
- 1 cup long-grain white rice
- 1/4 cup white onion, diced
- 2 cups chicken or vegetable broth
- 1 (8 oz) can tomato sauce
- 1/4 cup frozen peas
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon ground cumin
Instructions
- Rinse Rice: Rinse rice in a fine-mesh strainer until the water runs clear.
- Sauté Rice and Onions: Heat vegetable oil in a large pot with a lid over medium heat. Add rice and cook until golden brown. Stir in diced onions and cook until softened.
- Add Remaining Ingredients: Pour in chicken or vegetable broth, tomato sauce, peas, chili powder, garlic powder, salt, and cumin. Bring to a boil.
- Simmer: Reduce heat to low, cover, and simmer for 20-25 minutes, or until the liquid is absorbed and the rice is tender.
- Fluff and Serve: Fluff the rice with a fork and serve hot.
Notes
- You can use brown rice instead of white rice, but you’ll need to adjust the cooking time and liquid accordingly.
- If you don’t have frozen peas, you can use fresh or canned peas.
