Description

This Taco Night Rice is a flavorful and simple side dish that’s perfect for any Mexican-inspired meal! Fluffy white rice is cooked with onions, peas, and a blend of spices for a delicious and satisfying accompaniment to your favorite tacos, enchiladas, or burritos.


Ingredients

  • 3 tablespoons vegetable oil
  • 1 cup long-grain white rice
  • 1/4 cup white onion, diced
  • 2 cups chicken or vegetable broth
  • 1 (8 oz) can tomato sauce
  • 1/4 cup frozen peas
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin

Instructions

  1. Rinse Rice: Rinse rice in a fine-mesh strainer until the water runs clear.
  2. Sauté Rice and Onions: Heat vegetable oil in a large pot with a lid over medium heat. Add rice and cook until golden brown. Stir in diced onions and cook until softened.
  3. Add Remaining Ingredients: Pour in chicken or vegetable broth, tomato sauce, peas, chili powder, garlic powder, salt, and cumin. Bring to a boil.
  4. Simmer: Reduce heat to low, cover, and simmer for 20-25 minutes, or until the liquid is absorbed and the rice is tender.
  5. Fluff and Serve: Fluff the rice with a fork and serve hot.

Notes

  • You can use brown rice instead of white rice, but you’ll need to adjust the cooking time and liquid accordingly.
  • If you don’t have frozen peas, you can use fresh or canned peas.
