- 8 slices bacon, diced
- 1 lb ground beef
- 1 lb sweet Italian sausage, casings removed
- 1 white onion, diced
- 3 cloves garlic, minced
- 1 (32 oz) can kidney beans, drained and rinsed
- 1 (32 oz) can white beans (cannellini or Great Northern), drained and rinsed
- 1 (28 oz) can crushed tomatoes, undrained
- 1 cup ketchup
- 1/2 cup brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 cup water
- 3 tablespoons chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 2 teaspoons salt
- 1 teaspoon black pepper
- Optional toppings: shredded cheese, sour cream or Greek yogurt
Instructions
- Cook Bacon and Sauté: In a large Dutch oven, cook bacon until crispy. Remove bacon and set aside. Drain bacon grease. Add onion to the pot and cook until softened. Add ground beef and sausage; cook until browned, breaking up the meat as it cooks. Stir in garlic.
- Add Remaining Ingredients: Add kidney beans, white beans, crushed tomatoes, ketchup, brown sugar, Worcestershire sauce, Dijon mustard, and water to the pot. Stir well. Season with chili powder, paprika, cumin, salt, and pepper. Add cooked bacon crumbles.
- Simmer: Bring chili to a simmer and cook for 30 minutes, stirring occasionally. Add more water if needed to adjust consistency.
- Serve: Serve hot with shredded cheese and a dollop of sour cream or Greek yogurt, if desired.
Notes
- You can use any type of ground meat you like, but a combination of beef and Italian sausage adds great flavor.
- If you don’t have white beans, you can substitute with another type of bean, such as pinto beans or black beans.
- Adjust the amount of spices to your preference.
- For a thicker chili, you can mash some of the beans before adding them to the pot or simmer the chili uncovered to reduce the liquid.
