Description

Sweet Chili Chicken Delight is a flavorful baked chicken dish featuring tender cubed chicken breasts tossed with a mildly spicy seasoning and bathed in a rich sweet chili sauce made from garlic, ginger, honey, and butter. This easy-to-make recipe is perfect for a quick weeknight dinner and pairs wonderfully with rice or salads, garnished with fresh lime slices and green onions for a bright finish.

Ingredients

Units Scale

Chicken

  • 0.75-1 lb chicken breasts, cubed
  • 1 Tbsp corn starch
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 tsp red pepper

Sweet Chili Sauce

  • 1 Tbsp butter
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 3/4 cup sweet chili sauce
  • 1-2 Tbsp honey

Garnish

  • 1 lime, sliced
  • 3 Tbsp green onions, chopped

Instructions

  1. Preheat the Oven: Preheat your oven to 375ºF (190ºC) to prepare for baking the chicken and vegetables.
  2. Prepare the Chicken: Cube the chicken breasts into 1-inch pieces. Toss them in a bowl with corn starch, black pepper, salt, and red pepper to evenly coat and season the chicken.
  3. Bake the Chicken: Spread the seasoned chicken pieces on a baking sheet along with sliced bell peppers and jalapeños. Bake in the oven for 20 minutes, flipping the chicken halfway through to ensure even cooking and browning.
  4. Make Sweet Chili Sauce: While the chicken bakes, melt the butter in a saucepan over medium heat. Add minced garlic and ginger and sauté until fragrant, about 1-2 minutes. Stir in the sweet chili sauce and honey, and let it simmer for a few minutes to blend the flavors.
  5. Combine: Once the chicken is cooked, pour the prepared sweet chili sauce over it. Toss everything together well to ensure the chicken pieces are fully coated in the sauce.
  6. Serve: Plate the sauced chicken over rice or fresh salad as desired. Garnish with chopped green onions and lime slices for a fresh and zesty finish.

Notes

  • Chicken thighs can be used instead of chicken breasts for a juicier result.
  • Feel free to add other vegetables such as broccoli, zucchini, or mushrooms to the baking sheet for added nutrition and flavor.
  • Nutrition facts do not include any accompanying rice or cauliflower rice; adjust accordingly when serving.
  • Store leftovers in the refrigerator for up to 4 days or freeze in airtight containers for up to 2 months.
