Instructions
- Cook Pasta: Boil a large pot of salted water and cook the pasta until al dente according to package instructions. Drain and set aside.
- Prepare Sauce Base: Melt butter in a skillet over medium heat. Stir in flour and minced garlic and cook for about 30 seconds to form a roux and release garlic aroma.
- Add Liquids and Seasonings: Whisk in white wine (or chicken broth), Dijon mustard, lemon juice, and Italian seasoning. Simmer the mixture, allowing it to reduce by half to concentrate the flavors.
- Add Sun-Dried Tomatoes and Cream: Stir in sun-dried tomatoes and heavy cream. Let the sauce bubble gently for about 5 minutes to thicken and blend flavors.
- Incorporate Cheese and Spinach: Stir in freshly grated parmesan cheese until melted. Add fresh baby spinach and cook until wilted, about 1-2 minutes.
- Toss Pasta with Sauce: Add the cooked pasta to the skillet and toss to coat evenly. If the sauce is too thick, add a splash of reserved pasta water before draining. Season with salt and pepper to taste.
