Dough:
- 1/2 cup milk
- 1 teaspoon active dry yeast
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1/4 teaspoon salt

Filling:
- 3/4 cup strawberry jam
- 1 cup strawberries, fresh and chopped into small pieces
Cream Cheese Icing:
- 1/2 cup cream cheese, at room temperature
- 3 tablespoons butter, unsalted, softened
- 1 teaspoon vanilla extract
- 1 1/2 cups powdered sugar
Instructions
- Activate Yeast: Warm the milk in the microwave for 30 seconds. Add the yeast, stir, and let sit for 5 minutes until dissolved.
- Mix Dough: In a stand mixer bowl, combine flour, sugar, and salt. Add butter, egg, and yeast mixture. Knead with the dough hook for 3-5 minutes until elastic and soft.
- First Rise: Place dough in an oiled bowl, cover with plastic wrap, and let rise in a warm place until doubled. Use oven proofing or a warm oven (350ยฐF for 1 minute, then off) to speed up the process.
- Prepare Baking Dish: Butter a 9-inch pie plate or cast-iron skillet.
- Roll and Fill: Roll the dough into an 18×12 inch rectangle. Spread strawberry jam evenly, then arrange chopped strawberries.
- Shape Rolls: Roll the dough from the far side towards you, pinch the end closed, and cut into 8 equal rolls.
- Second Rise: Place rolls in the prepared dish, cover with plastic wrap, and let rise until doubled, using the warm oven method if desired.
- Prepare Icing: Combine cream cheese, butter, vanilla, and powdered sugar in a mixer until smooth. Adjust consistency with milk or powdered sugar as needed.
- Bake Rolls: Bake at 350ยฐF for 30 minutes, or until golden brown.
- Ice and Serve: Let rolls cool for 10 minutes, then drizzle with cream cheese icing and serve.
Notes
- Instant yeast can be used; add directly to the dough.
- Milk temperature should be 105-110ยฐF for proofing.
- If yeast doesn’t froth in milk, don’t continue.
- Prepare rolls up to step 8 the day before and refrigerate.
- Freeze unbaked rolls up to step 8 for 6 weeks; thaw overnight in the refrigerator before baking.
