Instructions

  1. Make the Cream Cheese Filling: In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract. Use a mixer or whisk to beat the mixture together until smooth and creamy.
  2. Add the Strawberries: Gently fold the diced strawberries into the cream cheese mixture, being careful not to mash the berries. Mix until the strawberries are evenly distributed.
  3. Assemble the Quesadilla: Spread half of the strawberry cream cheese filling evenly over one tortilla. Set aside.
  4. Grill the Quesadilla: Heat 1 teaspoon of butter in a skillet over medium-high heat. Once melted, place the prepared tortilla, cream cheese side up, into the skillet.
  5. Add the Top Tortilla: Spread 1 additional teaspoon of butter onto a second tortilla and place it, butter side up, on top of the filling to make a sandwich.
  6. Cook Until Crispy: Cook the quesadilla for 2-3 minutes per side, or until both sides are golden brown and crispy. Press gently with a spatula to ensure even browning.
  7. Repeat for the Second Quesadilla: Repeat steps 3-6 to prepare the second quesadilla, or use a griddle to cook both at the same time.
