These sticky lemongrass chili air fryer chicken wings are a flavor explosion! The marinade, packed with soy sauce, brown sugar, and fresh aromatics, infuses the wings with incredible taste. Air-fried to perfection, they are then topped with crunchy peanuts and zesty spring onions for a delightful finish.

Marinade:
- 1 kg (2lb) chicken wings
- 1 tbsp oil
- 3 tbsp soy sauce
- 3 tbsp brown sugar
- 2 tbsp lemon juice / lime juice
- 2 garlic cloves
- 2 tsp fresh ginger grated
- 1 red chili
- 1 stalk lemongrass roughly chopped
- Salt to taste
To serve:
- 1 cup peanuts roughly chopped
- 1 red chili finely chopped (optional)
- 1/2 cup spring onion/green onion finely chopped
Instructions
- Prepare the Marinade: In a food processor or blender, combine oil, soy sauce, brown sugar, lemon juice, garlic, ginger, chili, and lemongrass. Blend until smooth. Season with salt.
- Marinate the Chicken Wings: Place chicken wings in a bowl, pour the marinade over them, cover, and refrigerate for at least 30 minutes, preferably overnight.
- Cook the Wings: Arrange marinated wings in a single layer in the air fryer basket. Air fry at 200°C/390°F for 15-20 minutes, flipping halfway through, until caramelized and cooked.
- Prepare Toppings: Toast or roast peanuts until golden brown.
- Serve: Top cooked wings with peanuts, chopped chili, and spring onion. Enjoy!
