- 11 oz Kraft caramel bits
- 1/2 cup unsalted butter (chopped into pieces)
- 1/4 cup raisin puree
- 1/4 cup unsweetened cocoa powder
- 1/2 cup 1-minute rolled oats
- 1/2 cup chocolate chips (half semi-sweet & half milk chocolate recommended)
- 8 oz mini marshmallows
- 1/2 teaspoon vanilla extract
- 6 cups Rice Krispies cereal
For Raisin Puree
- Raisins (quantity as needed)
- Boiling water (enough to cover raisins, reserve 1/8 cup after soaking)
Instructions
- Prepare Raisin Puree: In a small bowl, add raisins and cover with boiling water. Let sit for 15-20 minutes until the raisins are rehydrated and plump. Remove and reserve 1/8 cup of water, drain the rest, then blend the raisins and reserved water in a small food processor or blender until creamy. Set aside until ready to use.
- Prepare Workspace: Line a space on the counter with parchment paper. This will be where you place the treats to cool and set.
- Melt Caramel and Butter: In a large pot over low heat, combine the Kraft caramel bits and unsalted butter. Stir frequently until the caramel begins to melt.
- Add Puree, Cocoa, and Oats: To the melted caramel mixture, add the raisin puree, unsweetened cocoa powder, and rolled oats. Stir until the caramel is completely melted and everything is well combined.
- Incorporate Chocolate Chips: Stir in the chocolate chips and continue mixing until they have melted into the mixture.
- Add Marshmallows: Stir in the mini marshmallows and keep stirring until completely melted and incorporated.
- Add Vanilla: Stir in the vanilla extract.
- Mix in Rice Krispies: Add the Rice Krispies cereal and stir gently but thoroughly until all the cereal is coated with the mixture.
- Scoop and Shape: Using a large cookie scoop (about 1/4 cup), tightly pack the mixture into the scoop, then place onto the prepared parchment paper. The mixture will be sticky.
- Set and Shape Patties: Allow the treats to sit for 10-15 minutes until the tops are less sticky. Use the bottom of a flat measuring cup to press the treats into patty shapes. If the bottoms are still sticky, flip them over to set further.
- Cool Completely: Let the treats sit until they are firm and completely cooled.
- Store: Store the treats between layers of parchment paper or wrap them individually in plastic wrap, then place in an airtight container to maintain freshness.
Notes
- To make raisin puree, soak raisins in boiling water for 15-20 minutes, reserve 1/8 cup water, then blend with the raisins until creamy.
- Packing the mixture tightly in the scoop helps the treats hold their shape.
- If treats are still sticky on the bottom after shaping, allow to set longer or flip them over.
- Store in an airtight container for best freshness. Wrap individually for grab-and-go convenience.
