Ingredients
Scale
Cookie Dough
- 1 box (15.25 oz) white cake mix (about 3 cups)
- 2 large eggs
- 1/3 cup vegetable oil
- 1/4 teaspoon Kelly green gel food coloring
Coating
- 3 tablespoons granulated sugar
- 6 tablespoons powdered sugar
Instructions
- Make the dough: In a large mixing bowl, combine the white cake mix, eggs, and vegetable oil. Stir together until a sticky dough forms.
- Color the dough: Add the Kelly green gel food coloring to the dough and mix until the color is evenly distributed.
- Chill the dough: Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes to firm up the dough for easier handling.
- Prepare to bake: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare sugar coatings: Place the granulated sugar in one small bowl and the powdered sugar in another.
- Portion the dough: Use a tablespoon-sized cookie scoop to portion out the dough evenly.
- Roll and coat: Roll each scoop of dough into a ball between your hands. Then roll each dough ball first in the granulated sugar until fully coated, followed by rolling in the powdered sugar until completely covered.
- Bake the cookies: Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 9 to 12 minutes, until cookies have spread slightly and the tops are crackled.
- Cool the cookies: Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes. Transfer them to a wire rack to cool completely.
- Store: Store the cooled cookies in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
Notes
- Chilling the dough is essential to make handling easier and to achieve the best texture.
- Be sure to coat the dough balls thoroughly in both sugars to create the signature crackled surface.
- Cookie size can be adjusted by using different cookie scoop sizes, but baking times may need to be adjusted accordingly.
- Store cookies in an airtight container to keep them fresh and chewy.
