- 4 slices thick-cut bacon, cooked and crumbled
- 8 ounces reduced-fat cream cheese (Neufchรขtel), softened
- 2 large eggs, divided
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dried oregano
- 10 ounces frozen spinach, thawed and squeezed dry
- 1/2 cup crumbled feta cheese (about 2 ounces)
- 1/4 cup finely grated Parmesan cheese (about 1 ounce)
- 2 sheets frozen puff pastry (9- or 10-inch), thawed overnight in the refrigerator
Instructions
- Preheat Oven and Prep: Preheat oven to 400ยฐF (200ยฐC) with racks in the upper and lower thirds. Line 18 muffin cups with paper liners or grease with nonstick spray. Cook bacon and crumble.
- Make Filling: In a bowl, microwave cream cheese in short bursts until softened. Mix in 1 egg, garlic powder, pepper, and oregano. In a separate bowl, combine spinach, feta, Parmesan, and bacon. Add the cream cheese mixture and stir until well combined.
- Fill Pastry Cups: Roll out puff pastry sheets and cut into 9 squares each. Line muffin cups with pastry squares, pressing into the bottom and allowing corners to overhang. Fill each with the spinach mixture.
- Fold and Bake: Bring pastry corners together over the filling and press lightly in the center. Brush with egg wash (remaining egg, beaten). Bake for 21-24 minutes, switching rack positions halfway through, until golden brown and puffed.
- Cool and Serve: Let cool for 10 minutes before removing from muffin tins. Serve warm or at room temperature.

- Baked puffs can be frozen for up to 1 month and reheated in a 375ยฐF (190ยฐC) oven.
- Filling can be made 1 day in advance and stored in the refrigerator.
