Description

These Spinach Puffs are a delightful and savory treat that’s perfect for any occasion! Flaky puff pastry cups are filled with a creamy spinach and cheese mixture, then baked until golden brown. They’re easy to make and perfect for a party appetizer, a brunch addition, or a light lunch.

  • 4 slices thick-cut bacon, cooked and crumbled
  • 8 ounces reduced-fat cream cheese (Neufchâtel), softened
  • 2 large eggs, divided
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon dried oregano
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 1/2 cup crumbled feta cheese (about 2 ounces)
  • 1/4 cup finely grated Parmesan cheese (about 1 ounce)
  • 2 sheets frozen puff pastry (9- or 10-inch), thawed overnight in the refrigerator

Instructions

  1. Preheat Oven and Prep: Preheat oven to 400°F (200°C) with racks in the upper and lower thirds. Line 18 muffin cups with paper liners or grease with nonstick spray. Cook bacon and crumble.
  2. Make Filling: In a bowl, microwave cream cheese in short bursts until softened. Mix in 1 egg, garlic powder, pepper, and oregano. In a separate bowl, combine spinach, feta, Parmesan, and bacon. Add the cream cheese mixture and stir until well combined.
  3. Fill Pastry Cups: Roll out puff pastry sheets and cut into 9 squares each. Line muffin cups with pastry squares, pressing into the bottom and allowing corners to overhang. Fill each with the spinach mixture.
  4. Fold and Bake: Bring pastry corners together over the filling and press lightly in the center. Brush with egg wash (remaining egg, beaten). Bake for 21-24 minutes, switching rack positions halfway through, until golden brown and puffed.
  5. Cool and Serve: Let cool for 10 minutes before removing from muffin tins. Serve warm or at room temperature.

Notes

  • Baked puffs can be frozen for up to 1 month and reheated in a 375°F (190°C) oven.
  • Filling can be made 1 day in advance and stored in the refrigerator.
  • For best results, fill pastry cups just before baking.
