For the bread dough

  • 500 grams bread flour
  • 7 grams active dry yeast or instant yeast
  • 1 cup milk
  • 1 teaspoon sugar
  • 1 egg
  • 80 grams melted butter + extra for brushing
  • 3/4 teaspoon salt

For the filling

  • 3/4 cup spinach, finely chopped
  • 1/2 cup grated mozzarella cheese
  • 1/2 teaspoon dried herbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon white pepper
  • Salt to season
  • 1 tablespoon cream cheese (optional)

Instructions

  1. Make the dough – Warm milk, mix with sugar and yeast. Let it activate. Combine with flour, egg, salt, and butter. Knead into a dough.
  2. Let the dough proof once – Allow the dough to double in size, covered, for about 90 minutes.
  3. Shape the dough – Roll out the dough, spread filling, cut into strips, roll up, and place in a baking pan.
  4. Let the dough proof for the second time – Let the rolls rise for another 50 mins-1 hour.
  5. Bake – Brush with butter, bake at 350F for 20 minutes.

  • Proof these rolls the day before, refrigerate, and bake fresh.
  • Experiment with different filling ingredients like feta cheese, sun-dried tomatoes, or cooked meats.
  • Flour substitutions: all-purpose, whole wheat, or spelt flour.
