Shrimp Balls:
- 1 1/2 pounds shrimp, peeled and deveined
- 1 tablespoon canola oil
- 2 garlic cloves, minced
- 2 shallots, chopped
- 3 Thai chili peppers, seeded and chopped
- Juice of one lime
- 2 egg whites
- 1/2 cup Panko bread crumbs
- 2 green onions, chopped (green parts only)
- 1 tablespoon chopped fresh cilantro
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
For Serving:
- Cooking spray
- Sweet chili sauce
Instructions
- Preheat the Oven: Preheat the oven to 350℉.
- Prepare Shrimp Mixture: Finely chop shrimp in a food processor. In a bowl, combine shrimp with egg whites, bread crumbs, green onion, cilantro, salt, and lime juice.
- Sauté Aromatics (Optional): Sauté garlic, shallots, and chili peppers in oil until translucent. Let cool.
- Combine Ingredients: Add sautéed veggies to the shrimp mixture and combine well.
- Form Shrimp Balls: Shape 1-inch balls from the mixture and place on a baking sheet.
- Bake: Bake for 15-17 minutes, then broil for 2 minutes until golden brown.
- Serve: Serve with sweet chili sauce.
Notes
- Thai chili peppers are hot, so remove seeds and handle with care.
- Using a food processor to chop the shrimp makes the process easier.
