Description

This Southwest Rice and Ground Turkey Skillet is a quick and easy one-pan meal that’s perfect for busy weeknights. It’s packed with flavor from ground turkey, vegetables, spices, and a blend of cheeses, all cooked together in a single skillet.


Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup finely diced onion
  • 1 cup finely diced red bell pepper
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chipotle powder (or chili powder)
  • 1 teaspoon dried cilantro
  • 1 (10-ounce) can original Rotel (or mild)
  • 1 (4-ounce) can mild diced green chilies
  • 1 (14-ounce) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 2 cups cooked rice
  • 1 1/2 cups shredded cheddar cheese, divided
  • Chopped scallions, for garnish
  • Lime juice, for garnish
  • Tortilla chips, for garnish

Instructions

  1. Sauté vegetables: Heat olive oil in a large skillet over medium-high heat. Sauté onion and bell pepper for 2-3 minutes until softened. Add garlic and sauté for 30 seconds more.
  2. Brown turkey and season: Add ground turkey and cook until browned, breaking it up with a spoon. Drain any excess grease. Stir in salt, pepper, chili powder, cumin, chipotle powder, and cilantro. Cook for 2 minutes.
  3. Combine remaining ingredients: Add Rotel, green chilies, black beans, corn, cooked rice, and 1/2 cup cheddar cheese. Stir and cook for 2 minutes to heat through.
  4. Melt cheese and serve: Top with remaining cheddar cheese, cover, and turn off heat. Let sit for 5 minutes to melt the cheese. Serve garnished with tortilla chips, scallions, and a squeeze of lime juice.

Notes

  • Use a non-stick skillet for easier cleanup.
  • Break up the ground turkey as it cooks to prevent large clumps.
  • Shred the cheese ahead of time for easier melting.
