Description

A comforting, hearty, and easy-to-make casserole, this Sour Cream Noodle Bake combines creamy noodles with a rich and flavorful meat sauce, all topped with melty cheese for a perfectly satisfying meal.

Noodles and Cream Mixture

    • 12 ounces egg noodles (1 package)
    • 1 1/2 cups sour cream
    • 1 cup cottage cheese
    • 2 tablespoons chopped chives or green onion
    • Freshly ground black pepper to taste
    • 1/2 teaspoon salt
    • 1/2 teaspoon onion powder

Meat Sauce

    • 1 tablespoon olive oil
    • 1/2 onion, chopped
    • 3 cloves garlic, minced
    • 1 pound 85% lean ground beef
    • 24 ounces marinara sauce (store-bought or homemade, 1 jar)

Topping

  • 2 cups shredded provolone cheese or mozzarella, divided
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Cook the noodles: Cook the egg noodles according to package directions. Drain, then return to the pot they cooked in.
  2. Prepare the cream mixture: In a bowl, combine sour cream, cottage cheese, chives, and a couple of shakes of black pepper. Stir in salt and onion powder. Add the sour cream mixture to the noodles and stir. Set aside.
  3. Preheat the oven: Preheat the oven to 350ยฐF. Grease a 9ร—13-inch baking dish and set aside.
  4. Sautรฉ onions and garlic: Heat oil in a large skillet over medium heat. Add the onion along with a sprinkle of salt and cook for 2โ€“3 minutes until softened. Stir in the garlic and cook for another minute.
  5. Cook the ground beef: Add the ground beef to the skillet and cook for a few minutes until browned. Stir in the marinara sauce and mix well.
  6. Assemble the casserole: Layer half of the noodles on the bottom of the prepared baking dish. Top with half of the ground beef mixture and half of the shredded cheese. Repeat with another layer of noodles, ground beef, and the remaining shredded cheese.
  7. Bake: Bake the casserole in the preheated oven for 20 minutes until heated through and the cheese is melted. Garnish with chopped parsley if desired.

Notes

  • You can swap the egg noodles for any short-shaped noodle.
  • Swap cottage cheese for ricotta if you prefer.
  • Add diced veggies like peppers or mushrooms in with the onions.
  • Swap ground beef for ground turkey, chicken, pork, sausage, meatless crumbles, crumbled tofu, or black beans.
  • Use sharp cheddar cheese for a less traditional (but still delicious) alternative.
  • Storage: Store sour cream noodle bake in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 3 months.
