Description

This Slow Cooker Italian Beef Stew is a hearty and flavorful dish thatโ€™s perfect for a cozy winter meal. Tender beef, pancetta, and a medley of vegetables are simmered in a rich tomato-based broth with Italian herbs and spices.


Ingredients

  • 2 ounces pancetta, diced small
  • 3 medium carrots, peeled and diced
  • 1 large onion, diced
  • 3โ€“4 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 1/4 โ€“ 1 1/2 pounds beef stew meat
  • 1 cup dry red wine
  • 4 tablespoons all-purpose flour
  • 1 (14-ounce) can low-sodium beef broth
  • 1 (14.5-ounce) can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon salt, plus extra for seasoning
  • 1/2 teaspoon pepper, plus extra for seasoning
  • 1/2 teaspoon Italian seasoning
  • 1 bay leaf
  • 1 cup Italian flat beans or green beans
  • 1 cup peas

Instructions

  1. Brown pancetta and vegetables: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sautรฉ pancetta until browned. Add carrots, onion, garlic, and mushrooms; season with salt and pepper. Sautรฉ until softened. Transfer to a slow cooker.
  2. Coat and brown beef: Season beef with salt and pepper. Toss with flour in a bowl. Brown beef in the same skillet with remaining olive oil. Add red wine to deglaze the pan, scraping up any browned bits. Transfer beef and wine to the slow cooker.
  3. Make broth and add to slow cooker: Whisk remaining flour from the bowl with beef broth until smooth. Add to the slow cooker along with tomato paste, diced tomatoes, salt, pepper, Italian seasoning, and bay leaf.
  4. Cook: Cover and cook on low for 8 hours.
  5. Add vegetables: Add green beans and peas during the last hour of cooking.
  6. Serve: Serve hot with polenta, egg noodles, or mashed potatoes, and crusty bread for dipping.

Notes

  • You can cook the stew without browning the ingredients first, but browning adds more flavor.
  • For a thicker gravy, add a cornstarch slurry (1 tablespoon cornstarch mixed with 1/8 cup water) during the last hour of cooking.
