: This Crock Pot Creamy Chicken and Penne is a comforting and flavorful one-pot meal! Tender chicken breasts, penne pasta, and a rich creamy sauce come together effortlessly in your slow cooker. It’s a simple and satisfying dish that’s perfect for busy weeknights.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 3 cups heavy cream
  • 1 cup chicken broth
  • 1/4 cup butter
  • 1 tablespoon garlic puree
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 oz penne pasta, uncooked
  • 1/2 cup shredded Parmesan cheese
  • 1/2 tablespoon parsley flakes

Instructions

  1. Layer Ingredients: Spray the inside of the Crock Pot with cooking spray. Place chicken breasts in a single layer in the bottom. Pour heavy cream and chicken broth over the chicken. Add butter, garlic puree, salt, and pepper.
  2. Cook Chicken: Cover and cook on HIGH for 3 hours.
  3. Add Pasta: After 2 hours, remove chicken and shred. Add penne pasta and Parmesan cheese to the Crock Pot and stir well. Cover and cook for 30 minutes.
  4. Combine and Finish: Stir in shredded chicken and parsley flakes. Cover and cook for an additional 10 minutes. Turn off the Crock Pot and serve.

Notes

  • You can use boneless, skinless chicken thighs instead of breasts. Adjust cooking time as needed.
  • If you don’t have garlic puree, you can use 2-3 cloves of minced garlic.
  • For a thicker sauce, you can whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) towards the end of the cooking time.
  • Serve with a side salad or your favorite vegetables for a complete meal.
