Description

These Slow Cooker Chicken Sloppy Joe Sliders offer a healthy, flavorful twist on the classic comfort food. Made with tender shredded chicken cooked in a tangy tomato-based sauce and served between roasted sweet potato rounds, this recipe is both nutritious and satisfying. Perfect for family meals, these sliders can also be served in lettuce wraps or over greens for a lighter option.

Ingredients

Scale

Chicken Mixture

  • 2 lbs. boneless chicken breast and/or thighs
  • 14 oz. can organic tomato sauce
  • ¼ cup canned organic tomato paste
  • 3 Tbsp. yellow mustard
  • 2 Tbsp. apple cider vinegar
  • 2 tsp. coconut amino
  • 3 pitted dates, finely chopped (optional for touch of sweetness)
  • ¾ cup shredded carrots
  • 1 tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. smoked paprika
  • ¼ tsp. sea salt
  • ¼ tsp. black pepper

Sweet Potato Rounds

  • 2 sweet potatoes, sliced into ¼-inch rounds
  • Avocado oil or olive oil (for roasting)

Instructions

  1. Prepare the Sauce and Chicken: In the slow cooker, combine the tomato sauce, tomato paste, yellow mustard, apple cider vinegar, coconut amino, chopped dates, shredded carrots, garlic powder, onion powder, smoked paprika, sea salt, and black pepper. Stir to mix all ingredients thoroughly.
  2. Add the Chicken: Place the boneless chicken breasts and/or thighs into the slow cooker, ensuring they are covered with the sauce mixture. Cover the slow cooker with its lid.
  3. Cook the Chicken: Set the slow cooker on low and cook for 4 hours, or until the chicken is tender and shreddable. Once done, use two forks to shred the chicken directly in the slow cooker, mixing it well with the sauce.
  4. Prepare the Sweet Potato Rounds: Preheat the oven to 425°F (220°C). Arrange the sweet potato slices on a baking sheet lined with parchment paper or foil. Lightly brush or spray both sides with avocado or olive oil. Roast for 20-25 minutes, flipping halfway through, until tender and slightly crispy on the edges.
  5. Assemble the Sliders: Once the sweet potato rounds and shredded chicken are ready, place a generous spoonful of the chicken sloppy joe mixture onto one sweet potato round and top with another round to form a slider. Repeat for the remaining rounds.
  6. Serve and Enjoy: Serve the sliders warm as is, or get creative by placing the chicken mixture in lettuce wraps or over a bed of greens for a lighter take. Enjoy this hearty, flavorful meal with family and friends.
