Description

This Slow Cooker Beef Ramen is a hearty and flavorful meal that’s perfect for a cold day! Tender beef, ramen noodles, and a variety of vegetables simmer in a rich and savory broth. It’s an easy and satisfying dish that’s perfect for a cozy weeknight dinner.


Ingredients

  • 1 pound ground beef, browned and drained
  • 32 oz beef stock
  • 1/2 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 23 teaspoons sriracha sauce (adjust to taste)
  • 3 cloves garlic, minced
  • 1 small head broccoli, chopped
  • 1 cup carrots, thinly sliced
  • 1 red bell pepper, sliced
  • 4 green onions, chopped
  • 2 (3 oz) packages instant ramen noodles
  • 2 teaspoons sesame oil
  • Garnish: additional green onions and sesame seeds

Instructions

  1. Combine Ingredients: In a slow cooker, whisk together beef stock, soy sauce, brown sugar, sriracha, and garlic. Add browned ground beef, broccoli, carrots, red bell pepper, and green onions.
  2. Slow Cook: Cover and cook on LOW for 4-5 hours, or until vegetables are tender.
  3. Add Noodles: About 15 minutes before serving, add ramen noodles (discard seasoning packets) and sesame oil to the slow cooker. Stir to combine and cook for 5 minutes, or until noodles are softened.
  4. Serve: Serve hot, garnished with additional green onions and sesame seeds.

Notes

  • You can substitute ground turkey or chicken for the ground beef.
  • If you don’t have fresh vegetables, you can use frozen vegetables.
  • For a spicier ramen, add more sriracha or a pinch of red pepper flakes.
