Description

This Slow Cooker BBQ Chicken recipe is a simple, flavorful dish perfect for sandwiches or as a main course. Tender chicken breasts are gently cooked in a tangy and sweet BBQ sauce mixture until easily shredded, making it an effortless meal for any occasion.

Ingredients

Scale

Chicken

  • 3 lbs boneless, skinless chicken breasts

Sauce

  • 1 1/2 cups BBQ Sauce (Sweet Baby Ray’s Honey BBQ recommended)
  • 1/2 medium onion, grated (including juice)
  • 1 Tbsp olive oil
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp brown sugar

Instructions

  1. Prepare the Sauce: In a 5-6 quart slow cooker, stir together the BBQ sauce, grated onion with juice, olive oil, Worcestershire sauce, and brown sugar until well combined.
  2. Add Chicken: Place the boneless, skinless chicken breasts into the slow cooker and turn them to coat thoroughly with the sauce mixture.
  3. Cook Chicken: Cover the slow cooker and cook on high for 2 to 3 hours or on low for 6 to 7 hours. Check earlier if you are using smaller chicken pieces, a smaller batch, or if your slow cooker runs hot. The chicken is done when it reaches an internal temperature of 165°F and can be shredded easily.
  4. Shred the Chicken: Remove the cooked chicken breasts to a cutting board and shred them using two forks.
  5. Combine and Serve: Return the shredded chicken to the slow cooker and stir it thoroughly to coat with the BBQ sauce before serving.

Notes

  • For best flavor, use a quality BBQ sauce like Sweet Baby Ray’s Honey BBQ.
  • Cooking times may vary depending on slow cooker model and size of chicken pieces.
  • This recipe yields about 8 servings suitable for sandwiches or as a main dish.
  • Shredding the chicken while warm makes the process easier and the chicken absorbs more sauce.
  • Leftovers store well in the refrigerator for up to 4 days and freeze nicely for up to 3 months.
