Ingredients

  • 1/2 cup balsamic vinegar
  • 3/4 cup chicken broth
  • 1/3 cup brown sugar
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic, minced
  • 8 boneless, skinless chicken breasts
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • Optional: 1 teaspoon cornstarch (for thickening sauce)

Instructions

  1. Combine Sauce Ingredients: In the slow cooker, whisk together balsamic vinegar, chicken broth, brown sugar, Dijon mustard, and minced garlic.
  2. Season Chicken: Trim excess fat from chicken breasts, if desired. Season generously with oregano, basil, thyme, rosemary, red pepper flakes, salt, and pepper.
  3. Slow Cook: Arrange chicken in the slow cooker and stir to coat with the balsamic mixture. Cover and cook on HIGH for 3-4 hours, or on LOW for 6-8 hours, or until chicken reaches an internal temperature of 165ยฐF (74ยฐC).
  4. Optional Sauce Reduction: If desired, transfer the cooking juices to a saucepan and simmer over medium heat to reduce and thicken. Whisk in 1 teaspoon of cornstarch for a thicker sauce.
  5. Serve: Serve the chicken with the sauce spooned over top. Enjoy with your favorite sides, such as mashed potatoes, rice, or roasted vegetables.

Notes

  • You can use boneless, skinless chicken thighs instead of breasts, but adjust the cooking time accordingly.
  • If you don’t have all the dried herbs, you can use a combination of your favorites or an Italian seasoning blend.
  • For a sweeter sauce, you can add a bit more brown sugar.
