  • 2 1/2 pounds (1.13kg) boneless skinless thighs, trimmed and cut into 2-inch (5.1cm) pieces
  • Garnish: 2 tablespoons chopped cilantro or parsley; lime wedges

Honey Lime Chicken Marinade

  • 3 tablespoons low-sodium soy sauce
  • 6 tablespoons honey or maple syrup
  • 1 teaspoon lime zest (from one lime)
  • 3 tablespoons fresh lime juice (from 1 1/2 to 2 limes)
  • 4 garlic cloves, minced or grated (or 1/2 tsp garlic powder)
  • 1 1/2 tablespoons grated fresh ginger
  • 1 tablespoon vegetable oil
  • 1 1/2 tablespoons Sriracha sauce
  • 1 1/4 teaspoons kosher salt
  • 1/2 teaspoon cornstarch (optional, for thickening)

Instructions

  1. MAKE MARINADE/SAUCE: Whisk or blend all marinade ingredients together.
  2. MARINATE CHICKEN: Marinate chicken in half of the marinade for 30 minutes at room temperature or 6-12 hours in the fridge.
  3. GLAZE: Optional – thicken reserved marinade with cornstarch to make a glaze.
  4. PREPARE GRILL: Heat grill to medium-high heat, oil the grill, and skewer chicken.
  5. GRILL CHICKEN SKEWERS: Grill chicken until golden brown, basting with glaze.
  6. SERVE: Drizzle with leftover sauce, sprinkle with herbs, and serve with lime wedges.

Notes

  • If using wood skewers, soak them for 30 minutes before grilling to prevent burning.
  • For overnight marinating, increase lime zest and omit lime juice to prevent ‘cooking’ the chicken.
