- Garnish: 2 tablespoons chopped cilantro or parsley; lime wedges
Honey Lime Chicken Marinade
- 3 tablespoons low-sodium soy sauce
- 6 tablespoons honey or maple syrup
- 1 teaspoon lime zest (from one lime)
- 3 tablespoons fresh lime juice (from 1 1/2 to 2 limes)
- 4 garlic cloves, minced or grated (or 1/2 tsp garlic powder)
- 1 1/2 tablespoons grated fresh ginger
- 1 tablespoon vegetable oil
- 1 1/2 tablespoons Sriracha sauce
- 1 1/4 teaspoons kosher salt
- 1/2 teaspoon cornstarch (optional, for thickening)
Instructions
- MAKE MARINADE/SAUCE: Whisk or blend all marinade ingredients together.
- MARINATE CHICKEN: Marinate chicken in half of the marinade for 30 minutes at room temperature or 6-12 hours in the fridge.
- GLAZE: Optional – thicken reserved marinade with cornstarch to make a glaze.
- PREPARE GRILL: Heat grill to medium-high heat, oil the grill, and skewer chicken.
- GRILL CHICKEN SKEWERS: Grill chicken until golden brown, basting with glaze.
- SERVE: Drizzle with leftover sauce, sprinkle with herbs, and serve with lime wedges.
Notes
- If using wood skewers, soak them for 30 minutes before grilling to prevent burning.
- For overnight marinating, increase lime zest and omit lime juice to prevent ‘cooking’ the chicken.
