- 1/4 teaspoon black pepper, plus more to season salmon
- 1/8 teaspoon celery salt
- 1/8 teaspoon paprika
- 4 (6-ounce) salmon fillets
- 1/3 cup panko breadcrumbs
- Fresh flat-leaf parsley, for garnish (optional)
- Lemon wedges, for serving (optional)
Instructions
- Preheat Oven and Cook Shrimp: Preheat oven to 400ยฐF (200ยฐC). In a skillet over medium-high heat, melt butter (or heat oil). Add garlic and cook until fragrant. Add shrimp and cook until opaque. Remove from heat.
- Make Filling: Stir cream cheese, spinach, garlic powder, parsley, salt, pepper, celery salt, and paprika into the skillet with the shrimp until well combined.
- Stuff Salmon: Line a baking sheet with parchment paper. Pat salmon fillets dry and butterfly each fillet, creating a pocket for stuffing. Season with salt and pepper. Spoon the shrimp mixture into the pockets. Secure with toothpicks if needed.
- Bake: Sprinkle panko breadcrumbs over the stuffed salmon. Lightly spray with cooking spray. Bake for 16-18 minutes, or until salmon is flaky and panko is golden brown.
- Serve: Garnish with fresh parsley and lemon wedges, if desired.
Notes
- Gluten-Free: Omit panko or use gluten-free breadcrumbs.
- You can substitute cooked shrimp for raw shrimp. If using cooked shrimp, reduce the cooking time in step 1.
- Adjust the amount of spices in the filling to your preference.
- Serve with your favorite sides, such as roasted vegetables or rice pilaf.
