Description

ย This Shrimp Stuffed Salmon is an elegant and flavorful dish thatโ€™s surprisingly easy to make! Flaky salmon fillets are stuffed with a creamy shrimp and spinach filling, then baked to perfection with a crispy panko topping. Itโ€™s a delicious and healthy meal thatโ€™s perfect for a special occasion or a weeknight dinner.

Ingredients

Units Scale
  • 2 tablespoons butter (or olive oil/avocado oil)
  • 1 1/2 tablespoons minced garlic
  • 1 pound raw shrimp, peeled, deveined, and tails removed, chopped into 1/2-inch pieces
  • 5โ€“6 ounces cream cheese, softened
  • 1 cup fresh spinach, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon salt, plus more to season salmon
  • 1/4 teaspoon black pepper, plus more to season salmon
  • 1/8 teaspoon celery salt
  • 1/8 teaspoon paprika
  • 4 (6-ounce) salmon fillets
  • 1/3 cup panko breadcrumbs
  • Fresh flat-leaf parsley, for garnish (optional)
  • Lemon wedges, for serving (optional)

Instructions

  1. Preheat Oven and Cook Shrimp: Preheat oven to 400ยฐF (200ยฐC). In a skillet over medium-high heat, melt butter (or heat oil). Add garlic and cook until fragrant. Add shrimp and cook until opaque. Remove from heat.
  2. Make Filling: Stir cream cheese, spinach, garlic powder, parsley, salt, pepper, celery salt, and paprika into the skillet with the shrimp until well combined.
  3. Stuff Salmon: Line a baking sheet with parchment paper. Pat salmon fillets dry and butterfly each fillet, creating a pocket for stuffing. Season with salt and pepper. Spoon the shrimp mixture into the pockets. Secure with toothpicks if needed.
  4. Bake: Sprinkle panko breadcrumbs over the stuffed salmon. Lightly spray with cooking spray. Bake for 16-18 minutes, or until salmon is flaky and panko is golden brown.
  5. Serve: Garnish with fresh parsley and lemon wedges, if desired.

Notes

  • Gluten-Free: Omit panko or use gluten-free breadcrumbs.
  • You can substitute cooked shrimp for raw shrimp. If using cooked shrimp, reduce the cooking time in step 1.
  • Adjust the amount of spices in the filling to your preference.
  • Serve with your favorite sides, such as roasted vegetables or rice pilaf.
