This Shrimp Pesto Penne is a quick and easy pasta dish that’s bursting with fresh flavors! Tender shrimp, crisp sugar snap peas, and penne pasta are tossed in a vibrant pesto sauce with a hint of lemon. Ready in just 30 minutes, it’s a perfect weeknight meal.

			- 12 ounces penne pasta
 - 1 tablespoon olive oil
 - 1 pound large shrimp, peeled and deveined (21 to 25 count)
 - 1 (8 ounce) package sugar snap peas, cut into 1/2-inch pieces
 - 1 (8 ounce) container refrigerated prepared pesto
 - 1 lemon, zested and juiced
 
Instructions
- Cook Pasta: Cook penne pasta according to package directions until al dente. Reserve ½ cup of pasta water before draining.
 - Cook Shrimp and Snap Peas: Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2 minutes undisturbed. Add snap peas and stir until shrimp are almost opaque.
 - Combine and Finish: Stir in pesto and cooked pasta until well combined. Add lemon zest and juice. Toss to combine. Add reserved pasta water as needed to reach desired consistency. Serve immediately.
 
Notes
- For a spicier dish, add a pinch of red pepper flakes to the sauce.
 - If you don’t have sugar snap peas, you can substitute with another type of green vegetable, such as asparagus or broccoli florets.
 - Garnish with grated Parmesan cheese or fresh basil leaves, if desired.
