- 1 pound baby red potatoes, halved or quartered (no bigger than 1-inch pieces)
- 2 cloves garlic, minced
- 1 tablespoon Creole seasoning
- 2 tablespoons chopped fresh parsley
- Kosher salt and freshly ground black pepper, to taste
- 1 tablespoon fresh lemon juice
- 2 tablespoons olive oil
- 5 tablespoons unsalted butter, divided
Instructions
- Preheat: Preheat oven to 425 degrees F (220 degrees C) or prepare grill to medium-high heat (450 degrees F / 230 degrees C).
- Prep foil: Cut 5 large sheets of heavy-duty foil (about 12×18 inches). Coat generously with nonstick cooking spray.
- Combine ingredients: In a large bowl, combine shrimp, sausage, corn, potatoes, garlic, Creole seasoning, parsley, salt, pepper, lemon juice, and olive oil.
- Assemble packets: Divide the mixture evenly among the foil sheets. Top each with 1 tablespoon of butter. Fold the foil to create sealed packets, leaving some space for steam.
- Cook: Grill packets for 25-30 minutes, flipping halfway through, or bake in the oven for 30-35 minutes, or until vegetables are tender.
- Serve: Carefully open the foil packets, allowing steam to escape. Serve immediately.
