Description

These Shrimp Boil Foil Packets are a fun and easy way to enjoy a classic seafood boil without the mess. Each packet is filled with shrimp, sausage, corn, potatoes, and seasoned with Creole spices, creating a complete and satisfying meal.

Ingredients

Units Scale
  • 1 pound large raw shrimp, peeled and deveined, tails off
  • 1 (14-ounce) package kielbasa smoked sausage, sliced into 1/2-inch thick coins
  • 2 ears corn, shucked, silk removed, each cut crosswise into 4 pieces
  • 1 pound baby red potatoes, halved or quartered (no bigger than 1-inch pieces)
  • 2 cloves garlic, minced
  • 1 tablespoon Creole seasoning
  • 2 tablespoons chopped fresh parsley
  • Kosher salt and freshly ground black pepper, to taste
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons olive oil
  • 5 tablespoons unsalted butter, divided

Instructions

  1. Preheat: Preheat oven to 425 degrees F (220 degrees C) or prepare grill to medium-high heat (450 degrees F / 230 degrees C).
  2. Prep foil: Cut 5 large sheets of heavy-duty foil (about 12×18 inches). Coat generously with nonstick cooking spray.
  3. Combine ingredients: In a large bowl, combine shrimp, sausage, corn, potatoes, garlic, Creole seasoning, parsley, salt, pepper, lemon juice, and olive oil.
  4. Assemble packets: Divide the mixture evenly among the foil sheets. Top each with 1 tablespoon of butter. Fold the foil to create sealed packets, leaving some space for steam.
  5. Cook: Grill packets for 25-30 minutes, flipping halfway through, or bake in the oven for 30-35 minutes, or until vegetables are tender.
  6. Serve: Carefully open the foil packets, allowing steam to escape. Serve immediately.

Notes

  • Cooking method: These packets can be cooked on the grill or in the oven.
  • Adjust cooking time: Cooking times may vary depending on your grill or oven.
  • Serving suggestion: Serve with crusty bread for dipping into the flavorful juices.
