Main Ingredients:
- 1 small head cauliflower, chopped (6 1/2 cups florets)
Sauce:
- 1/3 cup low-sodium soy sauce
- 1/4 cup pure maple syrup, honey, or agave
- 1/4 cup rice vinegar
- 1 tbsp minced garlic
- 1 1/2 tsp toasted sesame oil
- 1/2 tsp powdered ginger
Thickening Agent:
- 1 1/2 tbsp cornstarch or arrowroot
- 1/4 cup water
- sesame seeds and scallions, for garnish
Instructions
- Preheat and Prep: Preheat your oven to 450ยฐF. Cut cauliflower into florets, ensuring one side is flat. Arrange on a baking pan.
- Bake Cauliflower: Bake cauliflower for 10 minutes, then flip and bake for another 10 minutes until tender and slightly crispy.
- Make Sauce: In a saucepan, combine soy sauce, sweetener, vinegar, garlic, sesame oil, and ginger. Bring to a boil.
- Thicken Sauce: Dissolve cornstarch in water and slowly whisk into the boiling sauce. Cook until thickened.
- Coat Cauliflower: Pour the sauce over the baked cauliflower. Optionally, broil for a minute for extra crispiness.
- Serve: Garnish with sesame seeds and scallions before serving.
