Instructions

  • Brown Sausage: Heat 2 tablespoons olive oil in a large skillet over medium heat. Add sausage rounds and cook for 6-8 minutes, or until they start to caramelize. Remove sausage from the pan and set aside.
  • Cook Potatoes: Melt butter in the same skillet with the remaining tablespoon of olive oil. Add potatoes and cook for 10-12 minutes, or until fork-tender, stirring occasionally.
  • Add Spices and Broccoli: Add garlic, Cajun seasoning, paprika, red pepper flakes, and salt to the skillet. Cook for 1 minute. Add broccoli florets and cook for 5-6 minutes, or until they turn a deeper green and start to soften.
  • Melt Cheese: Return the cooked sausage to the pan. Remove the skillet from heat and sprinkle shredded cheese on top. Cover the pan with a lid and let sit for 5 minutes, or until the cheese is melted.
  • Serve: Garnish with freshly chopped parsley, if desired, and serve immediately.

Notes

  • You can use any type of smoked sausage you prefer, such as pork, chicken, or turkey.
  • If you don’t have baby potatoes, you can use Yukon Gold potatoes or red potatoes, cut into bite-sized pieces.
  • For a spicier dish, add more crushed red pepper flakes or a pinch of cayenne pepper.
  • If you don’t have Cajun seasoning, you can use a combination of garlic powder, onion powder, paprika, cayenne pepper, and dried herbs like oregano and thyme.
