  • 2 (8 oz) cans refrigerated crescent rolls

  • 1 large zucchini, sliced
  • 1 large yellow squash, sliced
  • 1 yellow onion, chopped
  • 2 large eggs, beaten
  • 2 cups shredded pepper jack cheese
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Brown Beef and Preheat: Brown ground beef in a skillet over medium heat. Preheat oven to 350ยฐF (177ยฐC).
  2. Combine Ingredients: Remove beef from the skillet and drain any excess grease. In a bowl, combine beef with black-eyed peas, cannellini beans, green chiles, garlic powder, cumin, oregano, pepper, and salt.
  3. Prepare Crust: Roll out crescent roll dough into two rectangles and press into a 9×13 inch baking dish, forming a crust along the bottom and sides. Bake for 10 minutes.
  4. Sautรฉ Vegetables: While the crust bakes, melt butter in the skillet. Sautรฉ zucchini, squash, and onion until tender.
  5. Assemble Casserole: Combine beef mixture with sautรฉed vegetables, beaten eggs, pepper jack cheese, and 1 ยฝ cups cheddar cheese. Pour into the partially baked crust. Sprinkle with remaining cheddar cheese.
