- 1/2 teaspoon black pepper

- 2 (8 oz) cans refrigerated crescent rolls
- 2 tablespoons unsalted butter
- 1 large zucchini, sliced
- 1 large yellow squash, sliced
- 1 yellow onion, chopped
- 2 large eggs, beaten
- 2 cups shredded pepper jack cheese
- 2 cups shredded cheddar cheese, divided
Instructions
- Brown Beef and Preheat: Brown ground beef in a skillet over medium heat. Preheat oven to 350ยฐF (177ยฐC).
- Combine Ingredients: Remove beef from the skillet and drain any excess grease. In a bowl, combine beef with black-eyed peas, cannellini beans, green chiles, garlic powder, cumin, oregano, pepper, and salt.
- Prepare Crust: Roll out crescent roll dough into two rectangles and press into a 9×13 inch baking dish, forming a crust along the bottom and sides. Bake for 10 minutes.
- Sautรฉ Vegetables: While the crust bakes, melt butter in the skillet. Sautรฉ zucchini, squash, and onion until tender.
- Assemble Casserole: Combine beef mixture with sautรฉed vegetables, beaten eggs, pepper jack cheese, and 1 ยฝ cups cheddar cheese. Pour into the partially baked crust. Sprinkle with remaining cheddar cheese.
