Snack Mix Ingredients
- 6 cups Corn Pops cereal or similar cereal
- 1 cup creamy peanut butter
- 1 cup semi-sweet chocolate chips
- 1 teaspoon vegetable oil
- 1/2 teaspoon honey
- 1 cup cocoa powder
- 3/4 cup powdered sugar
Instructions
- Prepare the Baking Sheet: Line a baking sheet with parchment paper to set aside for later when coating the snack mix.
- Melt Chocolate Mixture: In a large microwave-safe bowl, combine peanut butter, semi-sweet chocolate chips, and vegetable oil. Heat in the microwave at half power for 1 minute. Stir well and continue heating in 30-second increments at half power, stirring between each, until the mixture is smooth and well combined, about 2-3 minutes total.
- Add Honey and Coat Cereal: Stir honey into the melted chocolate mixture. Add 2 cups of Corn Pops cereal and stir carefully to coat all pieces evenly. Repeat adding cereal in 2-cup increments, mixing well each time, until all cereal is coated.
- Mix Cocoa and Powdered Sugar: In a large container or gallon-size resealable plastic bag, combine cocoa powder and powdered sugar and mix them together thoroughly.
- Coat Cereal with Cocoa Mixture: Add the chocolate-coated cereal into the container with the cocoa and powdered sugar mixture. Seal the container and shake vigorously until every piece of cereal is fully coated with the dry mixture.
- Set and Serve: Pour the coated snack mix back onto the parchment-lined baking sheet to allow the coating to set. Once set, the snack mix is ready to enjoy or store for later snacking.
