Description

This Red Bean Jambalaya is a flavorful and hearty dish that’s quick to make. It features smoked sausage, tender vegetables, and red beans in a spicy, tomato-based sauce, all cooked together with fluffy rice.


Ingredients

  • 1 tablespoon olive oil
  • 12 oz. smoked sausage, cubed
  • 2 celery stalks, medium-diced
  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons cajun seasoning
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 quart chicken broth
  • 2 (15 oz) cans red beans, drained
  • 1 (15 oz) can crushed tomatoes
  • 1 1/2 cups white rice
  • 1 cup green onion, sliced
  • 1 bottle hot sauce (Crystal preferred)

Instructions

  1. Brown sausage: In a heavy-bottomed pot over medium heat, add olive oil and smoked sausage. Cook sausage for 8-10 minutes or until deeply caramelized.
  2. Sauté vegetables: Add celery, bell pepper, onion, and garlic to the pot. Cook until vegetables soften, about 6-8 minutes.
  3. Simmer: Add red beans, crushed tomatoes, white rice, cajun seasoning, paprika, oregano, and chicken broth to the pot. Bring to a boil, then reduce heat to a simmer. Season with salt and pepper to taste, cover, and cook for 13-15 minutes.
  4. Rest: Remove from heat and let rest, covered, for 5 minutes.
  5. Serve: Finish jambalaya with hot sauce and green onion. Serve hot.

Notes

  • For a spicier jambalaya, add more cajun seasoning or hot sauce.
  • You can use different types of sausage, such as andouille or chorizo.
  • If you don’t have white rice, you can use brown rice or even quinoa.
