- 2 lbs smoked turkey wings
- 1 medium white onion, finely chopped
- 6 cloves of garlic, finely minced
- 1/2 teaspoon Creole Cajun Seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 5 cups low sodium chicken broth/stock, plus more as needed
- 2 lbs fresh green beans, ends trimmed & cut/snapped in half
- 2–3 medium red potatoes, rinsed & cut into quarters
- Kosher salt & freshly ground black pepper, to taste
- Hot sauce, for serving (optional)
Instructions
- Sear Smoked Turkey:
- Heat oil in a Dutch oven.
- Sear smoked turkey wings for 5 minutes, turning occasionally.
- Sauté Aromatics:
- Add onion, cook until softened.
- Add garlic, cook until fragrant.
- Toss in Creole Cajun seasoning and red pepper flakes (if using).
- Add Broth and Simmer:
- Pour in chicken broth, ensure meat is submerged.
- Simmer on medium-low for 1 1/2 hours, turning meat occasionally.
- Shred Turkey:
- Remove turkey, let cool, and shred the meat.
- Discard skin and bones.
- Return meat to the pot.
- Add Green Beans and Potatoes:
- Add green beans and potatoes.
- Add more broth if needed.
- Stir to combine.
- Simmer Vegetables:
- Cover and simmer on medium-low for 1 hour, until vegetables are tender.
- Season and Serve:
- Uncover, season with salt and pepper.
- Serve with hot sauce (optional).
