Instructions

  1. Prepare Oven and Pan: Preheat your oven to 350ยฐF (175ยฐC). Lightly grease a 9-inch square baking pan or line it with parchment paper.
  2. Make Crumble: In a large mixing bowl, combine oats, flour, brown sugar, baking soda, and salt. Add chilled, diced butter and work it into the mixture until it resembles coarse crumbs.
  3. Prepare Raspberry Filling: In another bowl, gently mix raspberries, granulated sugar, cornstarch, and lemon juice until raspberries are coated.
  4. Assemble Bars: Press about two-thirds of the oat mixture into the bottom of the prepared pan. Evenly spread the raspberry mixture over the base, then sprinkle the remaining oat mixture on top.
