Quesadillas
- 2 flour tortillas
- 1 teaspoon butter
- 2/3 cup shredded mozzarella cheese (divided)
- 2 tablespoons pizza sauce
- 6 slices pepperoni (sliced in half)
- 2 fresh basil leaves (sliced thin, optional)
Instructions
- Preheat skillet: Preheat a large non-stick skillet over medium-high heat to get it ready for cooking the quesadillas.
- Prepare tortillas: Lightly butter one side of each tortilla using about ½ teaspoon of butter per tortilla. Place one tortilla butter side down into the hot skillet.
- Add fillings: On the tortilla in the skillet, evenly layer ⅓ cup of shredded mozzarella cheese, followed by 2 tablespoons of pizza sauce, the halved pepperoni slices, and the thinly sliced basil leaves if using. Sprinkle the remaining cheese over the toppings.
- Assemble quesadilla: Top the ingredients with the second tortilla, butter side up, to form the quesadilla.
- Cook first side: Let the quesadilla cook undisturbed for 2 to 3 minutes until the cheese begins to melt and the bottom tortilla becomes slightly browned and crisp.
- Flip quesadilla: Carefully flip the quesadilla using a spatula, taking care not to spill the filling. Continue cooking on the other side until the cheese is fully melted and the tortilla is crisp around the edges.
- Serve: Transfer the cooked quesadilla back to a cutting board, cut it into wedges while still hot, and serve warm for the best taste and texture.
