Description

These Pizza Chicken Roll Ups are a fun and delicious way to enjoy all the flavors of pizza in a healthy and easy-to-make dish! Chicken breasts are filled with mozzarella cheese and pepperoni, then coated in a crispy breadcrumb mixture and baked to perfection. It’s a creative and satisfying meal that’s perfect for a weeknight dinner or a casual gathering.

  • Olive oil spray
  • 3 boneless, skinless chicken breasts
  • Kosher salt and black pepper, to taste
  • 1/2 cup shredded mozzarella cheese (plus more for topping)
  • 12 slices pepperoni
  • 1/4 cup seasoned breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1/2 cup marinara sauce
  • Fresh chopped basil (optional, for garnish)

Instructions

  1. Preheat and Prep: Preheat oven to 450°F (232°C). Line a baking sheet with foil or parchment paper and lightly grease with olive oil spray. In a bowl, combine breadcrumbs and Parmesan cheese. In another bowl, whisk together olive oil and lemon juice.
  2. Prepare Chicken: Cut each chicken breast in half horizontally to create 6 thin cutlets. Place each cutlet between two pieces of wax paper and pound to ¼-inch thickness. Season with salt and pepper.
  3. Fill and Roll: Top each chicken cutlet with mozzarella cheese and 2 slices of pepperoni. Roll up tightly and dip in the olive oil mixture, then in the breadcrumb mixture. Place seam-side down on the prepared baking sheet. Lightly spray the tops with olive oil spray.
  4. Bake: Bake for 20 minutes.
  5. Top and Finish: Remove from oven and top each roll-up with marinara sauce and additional mozzarella cheese. Bake for another 4-5 minutes, or until cheese is melted and chicken is cooked through.
  6. Serve: Garnish with fresh basil, if desired, and serve hot.

Notes

  • You can add other pizza toppings to the chicken roll-ups, such as mushrooms, onions, or peppers.
  • If you don’t have fresh basil, you can use dried basil for garnish.
  • Serve with a side salad or your favorite vegetables for a complete meal.
